Ingredients

8 portions
  • 6 mangos
  • 1/2 cups sugar
  • 2 envelopes unflavored gelatin
  • 1 cup Water
  • 1/4 liters whipping cream
  • 2 mangos, for the sauce
  • 3 tablespoons sugar, for the sauce
  • 1/2 tablespoons lemon juice, for the sauce

Preparation

Hydrate the gelatin, soaking in a half cup of cold water. Once it becomes fluffy, melt in the microwave for 10 seconds. Let cool.
Blend mango and its pulp, sugar, and gelatin. Beat the whipping cream until it looks like chantilly cream (smooth and satiny). Fold softly the cream to the mango mixture to keep it from deflating.
Pour in a crown mold, or individual molds, and refrigerate covered with clear plastic wrap until set.
Remove from mold and decorate with fresh mango cubes and mango sauce.
To prepare the sauce: blend two mangoes with sugar and lemon.
