Preparation
Acremer the butter (it is easier if it is at room temperature) with the sugar and add the yolks one by one while continuing to beat.
Apart liquefy the melon with the milkmaid and incorporate to the previous mixture.
Sift the flour with the royal 3 times and incorporate the mixture with the melon.
Beat the egg whites to the nougat point and introduce the mixture little by little in an enveloping way.
Empty a previously greased and floured mold.
Bake about 1 hour or until a stick comes out clean.
