Ingredients

6 servings
  • 2 egg whites
  • 120 grams of sugar
  • 3 spoonfuls of cocoa powder
  • lard for the tray
  • flours for the tray

Preparation

Beat the whites to the point of nougat.
Add the sugar little by little, continuing to beat, until you get a firm meringue. Peaks must be formed without being lowered.
Add the sifted cocoa and integrate in a wrap so that the egg whites are not lowered.
Fill a pastry bag with a curly duya, preferably 1/2 cm thick, with the mixture. Form the meringues in the greased and floured tray. Form the meringues from the center outwards.
If you do not have a pastry bag or duya you can put a little of the mixture on the tray with the help of a spoon.
Heat the oven to 60 ° C and bake for 1 hour. Turn off the oven and let them cool inside for 1 more hour to dry them from the center.
