This muffin is inspired by an entry that I tried at an anniversary meal but its flavor of Parmesan cheese was very strong and I decided to try my recipe with other cheeses and use Gamesa flour for Hot Cakes.

Ingredients

5 portions
  • 60 grams butter
  • 125 grams Gamesa® pancake mix
  • 1 teaspoon baking soda
  • 2 grams salt
  • 2 eggs
  • 230 milliliters milk
  • 30 grams Dijon mustard
  • 1 tablespoon bee honey
  • 1 1/4 cups mennonite cheese (Chihuahua cheese), grated
  • 2 tablespoons parmesan cheese, grated
  • 1/2 cups olive, stuffed with red peppers, sliced

Preparation

Preheat the oven to 200ºC, butter and flour the 5 aluminum molds, round 8 cm in diameter, place waxed paper or star on the bottom, melt the butter and sauté the chopped onions, without burning or darkening them, reserve. Besides, in a bowl, mix the flours, baking powder and salt. In another bowl, whisk together the eggs, milk, mustard and honey until foamy. Add the flour, baking powder and salt to this mixture. Add the cheeses and the cold sautéed onions, but the margarine is still liquid, mix to wet all the ingredients, add the olives and mix very well last, distribute into the molds already prepared and ready.
Bake for 20 to 25 minutes (until a toothpick is inserted and it comes out dry), let it cool, before unmolding, preferably eaten cold.
In a small frying pan, place two teaspoons of Parmesan cheese over low heat, melt a little, leaving a little browning, add 1 tablespoon of grated Mennonite cheese and allow to cool a little, before cooling completely, wrap like a taquito.
Add a whole olive, place the cheese block and finish with another olive.

Unmold the muffins already cold, remove the waxed paper, place it on the most beautiful side on a nice plate, introduce an olive to the skewer stick, the cheese block and finish with another olive on the tip, introduce the muffins together with the ceb

TIPS

It can be prepared, in a small rectangular pancake mold and served in slices, suggestion to eat cold the muffins is more digestive, you decide.
