Presentation

Make a cut in the muffin so that the marbling can be appreciated, which dresses the plate on its own. Garnish with chocolate shavings.

Tips

Matcha can be found in Japanese product stores or by order at the San Juan Market.

It can be substituted with green tea bag versions, but it should be ground as finely as possible in a mortar or spice grinder.
