Moisture the yeast with milk and let stand for 10 min.
In a clean surface form a source with the flour, place in the center the San Juan® Egg, the salt, the sugar, the hydrated yeast, the orange zest and the orange blossom essence. Knead for 10 minutes until a uniform dough is obtained.
Add the butter, knead for 5 more minutes until integrating.
In a previously greased bowl, place the dough and cover with non-stick plastic, let it ferment for 1 hour or until it doubles its volume.
Preheat the oven to 180 ° C.
On a floured surface form balls the size of your capacillo, form the taps with your fingers.
Place the balls of dough inside the cups and arrange the taps in the shape of a cross. Rinse with San Juan® Egg and bake for 15 min or until golden brown.
With the help of a brush, spread the bread with butter and sprinkle with sugar.
