These little cakes have their origin in the English buns, indispensable in the tea ceremony, which the emigrants of the XVII century took to the New World. Soon they were creating faster and simpler versions to make, with more consistent ingredients such as cornmeal, lard and vegetables, transforming them into great snacks. Over the years, each region developed its specialties based on the typical ingredients of each area. The mufins had become grandma's cupcakes, something very homemade. But this changed when in 1880 an English baker, SB Thomas, opened a store in New York, transformed and refined these sweets and began supplying large quantities daily to hotels and restaurants frequented by the high society of the Big Apple.

Ingredients

18 servings
  • Butters to spread the molds
  • 250 grams of pineapple natural
  • 3 spoonfuls of Rum black
  • 250 grams of flour
  • 1/2 teaspoonful of baking soda
  • 1 egg
  • 125 grams of sugar
  • 80 milligrams of olive oil
  • 1 Cup of natural yoghurt

Preparation

Preheat the oven to 180ºC and butter the molds (use silicone) and put them in the fridge.
Cut the pineapple into very small pieces, add the rum.
Mix the flour with the baking soda and reserve.
Beat the egg and add the sugar, oil, yogurt and pineapple.
Then add the flour mixture and stir until all the ingredients are well integrated.
Distribute the dough in the molds and bake about 20 minutes.
Remove from the oven and let stand for five minutes.
Dismount and wait for them to cool to decorate them.
Note: with these amounts I got 18 units.

PRESENTATION

I decorated them with chocolate mousse, which I had made in the fridge and so I took advantage of it, a piece of pineapple and golden glitter, to give it a festive air and shine this dessert, since I discovered the glitter I love to use it in pastel

TIPS

The special touch goes in the decoration of course you should always carry a piece of pineapple up.
