For the cheesecake, beat the cream cheese with the yogurt, sweetener, vanilla, and zest. Add the gelatin in a thin stream and beat until completely integrated. Pour the previous preparation into a cake mold and smooth the surface with a spatula. Refrigerate until fully set.
