Preparation
In a bowl, beat the egg yolks with ¼ cup of sugar until getting a lighter color.
Add the corn starch and continue mixing.
In a sauce pan, heat the milk and add ¼ cup of sugar, the vanilla extract and the lime zest. Before the milk comes to simmer, add some to the egg yolks mixture to temper. Pour the egg yolks mixture in the milk and continue cooking for 15 minutes at low heat until it thickens. 6.Add the hydrated gelatin to the mix.
In a bowl, combine the melted chocolate with the whipping cream and the honey.
In a mold, put a layer of vanilla cookies and cover with custard cream. Repeat until reaching ¾ of the mold. Let it chill in the fridge for 20 minutes. Cover with the chocolate ganache and refrigerate for 5 more minutes.
Cut and serve cold
