Beat the cream cheese with the heavy cream, powdered sugar, and vanilla extract until you have a smooth mixture. Gradually add the hydrated gelatin and beat for 1 more minute. Place cling film over a bowl, sticking it to the sides, cover with cookies, add a quarter of the filling, the strawberries, and a layer of cookies. Repeat the process until completely filled, ending with cookies.
