Remove the puff pastry from the refrigerator and let it set at room temperature for about 15-20 minutes.
Then sprinkle with sugar and with a roller press to integrate the sugar into the dough.
Then sprinkle again with sugar and lightly tighten again with the rolling pin so that the sugar is embedded in the dough.
Make a mark in the center of the puff pastry. Take an extra puff pastry and take it to the center. Do the same with the other end.
We make a fold again taking one end towards the center and then the other end. This time you do not need to make a mark because you can see the center of the previous fold.

This is the last fold. Just take one of the halves and put it on the other. Squeeze gently with your fingers so that everything comes together.
Now with a sharp knife cut slices of puff pastry from one centimeter to one centimeter. Fold out the ends of each slice.
Place the palmeritas on a tray with a baking paper. Do not put them too close to each other because they will grow during baking.
Put in the preheated oven at 200 C and leave for 10 minutes. Then, be careful not to burn, turn them over and let them brown for 2 to 5 minutes more.
