The pavlova is a meringue cake, named after the Russian dancer Anna Pavlova, with its incredible flavor and delicious crunchy texture on the outside and soft on the inside. In addition, the contrast with red fruits makes it the perfect and lucidor.

Ingredients

10 servings
  • 150 grams of San Juan® Egg White (5 pcs)
  • 250 grams of sugar
  • 2 tablespoons of cornstarch
  • 1 teaspoon of white vinegar
  • 1 teaspoon of liquid vanilla
  • 190 grams of cream cheese
  • 1/4 of cup of powder sugar
  • 1 tablespoon of yellow lemon zest
  • 1/2 cup of red fruit jam
  • 1 cup of raspberry
  • 1 cup of blackberry
  • 1 cup of berry
  • to taste of peppermint to decorate

Preparation

Preheat the oven to 130 ° C.
Beat the egg whites of San Juan® until they double in volume, add the sugar little by little, until integrating.
Add the corn starch, beat for 3 more minutes, add the white vinegar and vanilla essence.
Pour the meringue in a sleeve with smooth duya, place the meringue on a tray, with waxed paper filling 2 circles of 20 cm in circumference; Bake for 1 hour or until the meringue is crispy on the outside and slightly soft on the outside.
For the filling, beat the cream cheese with the icing sugar, and the lemon zest until creamy. Reservation.
With the help of a sleeve with curly duya, place the filling on a meringue base, add the jam, the red fruits, and cover with the other meringue. Decorate with more cream, jam, fruit and fresh mint.
