The combination of textures in this recipe for transparent lemon pie, combined with its ingredients will make you taste identical to a classic dessert that we all like, as this innovative dessert is based on the same as a lemon carlota, but ground. In addition, it is made with lemon soda and its creamy topping of cream cheese with lemon is the perfect complement of flavor, to accompany with your coffee or your favorite hot drink.

Ingredients

8 servings
  • 1 Cup of almond
  • 3 cups of Maria cookie for the base
  • 1/2 Cup of condensed milk for the base
  • 1/4 of Cup of evaporated milk for the base
  • 1/2 teaspoonful of Salt for the base
  • 1/4 of Cup of lemon zest for the base
  • 1/4 of Cup of Butter cold for the base
  • 4 cups of lemon soda
  • 1/2 Cup of yellow lemon juice
  • 1/2 Cup of unflavored gelatin melted and hydrated
  • 2 cups of cream cheese
  • 1/4 of Cup of condensed milk
  • 4 spoonfuls of lemon zest
  • 1/4 of Cup of lemon juice
  • 2 green lemons sliced, to decorate

Preparation

For the base, place the almonds in your Vitamix® mixing bowl and blend until a very fine powder is obtained. Reservation.
Place the biscuits, condensed milk, evaporated milk, salt, zest, butter and almonds in your Vitamix® and blend until you get a consistent mixture.
Pour the previous preparation into a mold 20 cm in diameter and compact with the help of a spoon. Refrigerate
For the filling, heat the lemon soda with the lemon juice and the grenetina in a pot, for about 5 minutes, without boiling. Chill and pour into cookie base. Refrigerate until solidified, reserve.
For the cream, blend in your Vitamix® the cream cheese with the condensed milk, the lemon zest and the lemon juice until you get a smooth and thick mixture. Place the mixture in a sleeve with curly duya.
Unmold the pie and decorate with the cream, sliced lemon and serve.

PRESENTATION

Decorate the pie with the cream cheese and lemon slices.

TIPS

To make it more transparent, you can use citric acid and sheets of grenetina.
