Preparation
The pineapple is boiled with 2 cups of water and 250 gr. of sugar until it is soft.
The cornstarch is dissolved in a cup of water and added to the pineapple and moved with a wooden shovel, taking care not to burn, let it boil for about 2 minutes and our pineapple sweet is ready for filling.
Beat the 2 eggs with 250gr. of sugar and the butter is added until it is spongy.
Add the flour and teaspoon of the baking powder and knead until the dough is firm.
It is spread on the floured table and some tortillas are made that are rolled in the palote and put on the molds, the edges are trimmed and filled with pineapple. After they are covered with another tortilla, they are varnished with beaten egg and they are chopped with the knife and baked at 240ºC for about 20 minutes until they are brown.
