Ingredients: 75 grams icing sugar; 120 grams butter; 2 egg yolks; 1/2 teaspoons baking powder; 1 pinch salt; 250 grams flour; water, as needed (around 2 tablespoons); 2 mameyes, large, firm, and ripe; 2 cups cow's milk; 1 vanilla bean, or 1 teaspoon of vanilla extract; 6 egg yolks; 100 grams sugar; 20 grams cornstarch; 20 grams flour; 3 tablespoons apricot jam, for brushing the pie

In a saucepan, bring the milk to a boil with the vanilla. Beat the 6 egg yolks with the 100 grams of sugar. Add the cornstarch and flour and a bit of the hot milk, whisk over medium heat. Add the rest of the milk and let it boil for one minute. Remove from heat and cover with plastic wrap to prevent a skin from forming, then let it cool.
