You'll never taste a creamier jello than this recipe for Pina Colada Mosaic Gelatin, which is prepared with coconut gelatin, a touch of rum and that encapsulate cubes of pineapple flavored gelatin. The easiest thing about this gelatin is that it is prepared in any glass oven dish that you have. A tip to make jellies that will be very useful, is that to accelerate the fruit set, you can put it in the freezer, but you should try not to freeze.

Ingredients

10 portions
  • 1/2 cups pineapple jelly, for the pineapple jello
  • 4 cups Water, hot
  • 2 cups cream cheese, for the coconut gelatin
  • 1 cup Pineapple in syrup, with everything and syrup, for coconut jello
  • 1 1/2 cups Rum, for the coconut gelatin
  • 1 cup pineapple juice, for the coconut gelatin
  • 1 cup coconut cream, for the coconut gelatin
  • 6 envelopes gelatin, melted and hydrated, (7g each) for the coconut gelatin
  • enough whipped cream, to decorate
  • enough peppermint, to decorate
  • enough cherries, to decorate
  • enough grated coconut, to decorate

Preparation

In a bowl dissolve the pineapple gelatin powder in the hot water, mix until integrated and placed in a square refractory dish. Refrigerate until set and when it is solid cut jello cubes.
Blend cream cheese with pineapple in syrup, rum, pineapple juice and coconut cream, add the gelatin in the form of a thread while still liquefying to integrate.
In a large rectangular oven dish, arrange the jello cubes and fill with the previous preparation, set for 2 hours in refrigeration or until it solidifies completely.
Cut the gelatin into large cubes, unmold and decorate with whipped cream, mint and grated coconut, place a cherry on top to finish. Enjoy

PRESENTATION

Serve with whipped cream, grated coconut, cherries and fresh mint.

TIPS

To accelerate the fruit setting you can put it in the freezer, just be careful not to freeze it.
