Preheat the oven to 175°c Grease and flour a 9-inch (23cm) springform cake pan. Set aside. Place a stainless steel bowl over a saucepan with boiling water. In the bowl, whisk the eggs and sugar for 5 minutes or until the mixture thickens. Remove from heat and continue whisking until the mixture cools slightly. Set aside.
