Chef Azari presents us with the traditional Mexican recipe for tacha squash, perfect for celebrating the Day of the Dead. It is a tasty pumpkin with a rich brown sugar syrup.

Ingredients

12 portions
  • 3 kilos Castilla pumpkin, cut into large triangles
  • 5 whole cloves
  • 1 raja cinnamon
  • 1 kilo guava, roughly cut
  • 1 kilo piloncillo
  • 1/2 kilos sugar
  • 3 tablespoons carbonate, calcium (lime)
  • 1/2 liters whipped cream

Preparation

Soak the pumpkin cut into large pieces in water with three tablespoons of lime or calcium carbonate for 24 hours. Rinse it off. Add a clove to each piece of pumpkin to perfume it.
Place the water in a pot and heat to a boil, add the cinnamon. Boil for about a minute. Grate the piloncillo, add it to the water to make a syrup, stir constantly to dissolve it well. Once it is melted, add the pumpkin and guavas. Boil until the pumpkin is cooked. Meanwhile, stir the ingredients carefully to prevent the pumpkin from whipping.
In a bowl, beat the cream with a balloon whisk until it is perfectly aerated and has a smooth texture. Whipped cream with this texture is also called "whipped cream."

PRESENTATION

Serve each plate with a portion of pumpkin and guavas, garnish with whipped cream. Add an elegant touch by adding an edible flower to each plate.

TIPS

If you wish, you can remove the bones with the guava.
