Delicious velvet red cupcakes with cream cheese bitumen. Ideal for any occasion, I like to prepare them at Christmas and give my friends a sweet touch.

Ingredients

12 portions
  • 50 milliliters olive oil
  • 160 grams refined sugar
  • 1 egg, medium
  • 1 tablespoon cocoa, sugarfree
  • 1/2 teaspoons red gel food color, for pastry
  • 1 1/2 teaspoons vanilla extract
  • 120 milliliters milk, with a teaspoon of lemon juice
  • 150 grams flour, sifted
  • 1 teaspoon baking soda
  • 1 teaspoon white vinegar
  • 75 grams unsalted butter, at room temperature (for bitumen)
  • 300 grams powdered sugar, sifted (for bitumen)
  • 190 grams cream cheese, (for bitumen)
  • 5 tablespoons milk, (for bitumen)

Preparation

We preheat the oven to 180 ° C and put the cups on the cupcake tray.
We put the milk in a cup with lemon juice for 10 minutes and reserve.
With the help of the blender , beat the oil with the sugar until they are well integrated and add the egg and vanilla while stirring.
In another container we sift the flour with the cocoa.
Beat at low speed the oil mixture and add half the flour with the cocoa and then add the milk that has the lemon juice and finally add the other half of the flour with cocoa.
Finally in a small bowl we mix the vinegar with the baking soda and when it starts to bubble we add it to the previous mixture ... it is very important not to mix the baking soda with the vinegar before this step
When the mixture is homogeneous, we add the red dye and distribute it in the cups to fill 2/3 of each layer.
We bake 20 to 25 minutes or until a toothpick comes out clean.
We take out the oven and let cool for 5 minutes, no more time, and put in a rack to cool completely.
To prepare the bitumen: beat the butter with the sugar and milk until they are completely integrated and then add the cold cheese and beat for 1 minute at low speed and then for 3 minutes at medium speed until the mixture is homogeneous and creamy
Decorate the cupcake with the pastry bag when they are cold and put a sweet heart.
