Ingredients

  • 7 grams baking yeast
  • 250 milliliters milk
  • 75 grams butter
  • 75 grams sugar
  • 1/2 teaspoons salt
  • 4 eggs
  • 150 grams brown sugar, for the filling
  • 40 grams flour, for the filling
  • 120 grams butter, cold and cut into small pieces, for filling
  • 6 teaspoons cinnamon
  • 100 grams powdered sugar, For the glaze
  • 4 tablespoons liquid cream, For the glaze
  • 10 milliliters Water, For the glaze

Preparation

Preheat the oven to 190 ° C.
For the dough place half of the flour with the yeast in the bowl of the blender ; mix everything well and reserve.
Next, pour the milk in a saucepan with the sugar, butter and salt, and heat little by little, until the butter melts but does not boil.
Add to beat in low speed the mixture of flour and yeast, incorporating little by little the milk with the butter, and then the eggs, one by one.
Once the mixture is homogeneous, beat about 3 minutes at maximum speed.
Then, slowly add the rest of the flour, and beat at low-medium speed. After 3 or 5 minutes, the dough will be elastic and not sticky.
Change to the mass hook, or start kneading on the table until you get the right texture.
Place the dough in a large bowl previously greased, covered with a plastic wrap.
Let it ferment in a place where it is not very cold between 1 hour and a half and 2 hours, until it has doubled its volume. Meanwhile, prepare the filling.
For the Stuffing in a bowl, mix all the ingredients until the mixture looks like crumbs.
Once the dough has doubled in size, crush it with your fist to let it lose air and wait 10 minutes.
Stretch the dough on a floured surface to form the shape of a square of 30 cm x 30 cm.
Pour the filling on top and roll it into a dough roll, sticking the ends with a little liquid cream or milk.
Cut 8 equal slices of the roll and place them on a slightly greased glass or ceramic oven dish. Let the slices of the roll rest for 1 hour covered with plastic wrap, until they double in size.
Bake for 25-30 minutes, until golden brown and when inserting a toothpick into one of the slices, leave clean.
For the glaze add the cream and mix the ingredients with the trickle of water until the mixture is homogeneous.

TIPS

Pour the glazed mixture over the rolls, and ... You'll have your cinnamon rolls ready to serve!
