Place the flour and butter in a bowl. Use a fork to break the butter and sugar until it resembles sand. Then, gradually add the cold water and knead with your hands until a smooth and homogeneous dough forms. Finally, cover with plastic wrap and let it rest in the refrigerator for 15 minutes. Set aside. Roll out the dough on a clean surface with a rolling pin until it reaches a thickness of 5 mm. Cut out circles of dough using a 12 cm diameter cutter. Set aside.
