For the dough: crush the cookies very well. Add the butter and the cream, mix well and distribute evenly in a tall mold. Place in a preheated oven at 200 °C for 5-10 minutes depending on how crispy it is, and set aside. For the chocolate filling: heat 400 ml of heavy cream in a double boiler and add the dark chocolate, stirring until incorporated. Add 20 g of gelatin and leave for 5 more minutes in the double boiler, let cool a bit and add the cookie base, wait for it to set.
