Ingredients

4 portions
  • 2 eggs
  • 1/3 cups maple syrup, pure

Preparation

Pre-heat the oven to 200 degrees centigrade. Separate the yolks from the whites.
In a bowl mix the yolks and maple until they are incorporated.
In another bowl beat the whites until soft peaks form, once that happens add the mixture of the yolks and the maple in an enveloping way.
Pour the mixture into 4 souffle molds and place them on a baking sheet, then put them in the oven and immediately reduce the temperature to 190 degrees Celsius. Bake for 10 minutes or until puffed.

PRESENTATION

Decorate with powdered icing sugar if you have it.

TIPS

Remember not to open the oven while the Souffles are baking, because if you do, they will not inflate. Use pure maple for a good flavor and consistency.
