Vegan Gingerbread Cookies

Because we know that Christmas is your favorite time, surely you will not be able to resist these vegan gingerbread cookies with their delicious and balanced combination of spices that together take you back to the most longed-for time of the year. Enjoy them with a glass of almond milk.

Ingredients

6 portions
  • 1/2 cups coconut oil
  • 1/4 cups sugar
  • 1/3 cups sugar
  • 2 cups flour
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoons clove
  • 1 1/2 teaspoons ginger
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1/4 cups maple syrup
  • 1/4 cups almond milk
  • 1 cup powdered sugar, for the frosting
  • 3 tablespoons lime juice, for the frosting
  • glaze, red and green, to decorate

Preparation

Preheat the oven to 180 ° C.
In a bowl, mix the coconut oil, sugar, brown sugar, little by little add the flour, cinnamon, nutmeg, cloves, ginger, baking powder, salt, maple syrup and almond milk, beat until integrated. Wrap in nonstick plastic and refrigerate for 20 min.
Roll out the dough on a floured surface and cut with a gingerbread man and star cookie cutter.
Place on a tray and bake for 15 min. Let cool and reserve.
For the glaze: mix the icing sugar with the lemon juice. Pour into a duya.
Decorate the cookies, let them dry and enjoy with a glass of almond milk.

PRESENTATION

In a cookie jar, accompanied by a jug of almond milk.

TIPS

In addition to providing flavor, coconut oil is a natural preservative due to its fatty acids.

Deiliciosas!, aunque no tenia nuez moscada y utilice pecanas. Miel de maple la cambie por miel de agave, y leche de almendras por leche de soya.
