Ingredients

15 portions
  • 4 ounces greek yogurt
  • 3 eggs, separated into egg whites and yolks
  • 6 ounces sugar
  • 2 ounces oil
  • 10 ounces flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation

Preheat the oven to 180ºC. In a bowl put the 3 yolks together with the sugar and beat until the mixture is frothy and almost white (with the blender ). Add the oil and beat with the help of a spatula. Since the oil is integrated, incorporate the yoghurt with enveloping movements. Add vanilla extract (can be changed with some other flavor) and baking powder.
Add previously sifted flour, little by little until integrating with enveloping movements. In a bowl on the side whisk the whites with the pinch of salt. And incorporate this last to what we already had previously beaten. Put in capacillos until filling 3/4 parts of its capacity. Bake for 30 minutes or until a toothpick comes out clean.
Add the oil and beat with the help of a spatula.
Since the oil is integrated, incorporate the yoghurt with enveloping movements.
Add vanilla extract (can be changed with some other flavor) and baking powder.
Add previously sifted flour, little by little until integrating with enveloping movements.
In a bowl on the side whisk the whites with the pinch of salt. And incorporate this last little by little to what we already had previously beaten with enveloping movements. If you chose to stir some extra ingredient in the mixture, do it very carefully.
Put in capacillos until filling 3/4 parts of its capacity. If you decided to put as a topping some nuts, or nuts this is the right time to do it.
Bake for 25 minutes or until a toothpick comes out clean.

PRESENTATION

You can choose to sprinkle them with icing sugar once cold, or even some bitumen. At home we prefer them natural.

TIPS

Optional: add a teaspoon of cinnamon, ginger, nutmeg, cardamom, to obtain a different and more interesting flavor. Toppings can be added to the mixture or to each layer: nuts, roasted almonds, coconut, blueberries, nut
