In a bowl, mix the ground beef with the onion, BBQ sauce, garlic powder, mustard, egg, parsley, and season with salt and pepper. Incorporate the breadcrumbs and mix until a manageable consistency is achieved. Take a portion of ground meat and start flattening it with your hands, then gradually hollow out the center to fill with a rectangle of manchego cheese, begin to cover the cheese with the same meat (only if necessary, you can add more meat mixture to fully cover the cheese), shape it into an oval until you have a croquette. Repeat until all the meat is used.
