Lentils are rich in protein, fiber, iron, zinc, and folic acid. Iron is a mineral necessary for growth and helps fight anemia. Besides that they are delicious and easy to make.

Ingredients

6 portions
  • 1/2 cups onion, finely chopped
  • 1 teaspoon vegetal oil
  • 2 tablespoons lentil
  • 3 carrots, medium, peeled and diced
  • 1 1/2 cups Water, boiling
  • 1 tablespoon margarine, unsalted butter can be used
  • 2 roma tomatoes, peeled, seeded and cut into large cubes
  • 1/4 cups tofu, diced

Preparation

In a hot skillet add the vegetable oil and onion until soft about 3-4 minutes.
Rinse the lentils, drain all the water and add to the onion. Add the carrots and boiling water. Increase the heat until it boils, cover and cook over medium heat for 25 minutes.
Melt margarine in skillet; Add the tomatoes until they are soft and add the tofu.
Strain the carrot and lentil mixture and reserve the liquid where you cooked them.
In a food processor, combine the carrot and lentil mixture with ½ cup of the liquid where you cooked it with the tomato mixture and make a smooth consistency puree.

PRESENTATION

Serve warm in a bowl.

TIPS

This can be a perfect porridge for your baby or you can accompany various dishes and they will taste delicious.
