Ingredients

10 portions
  • 1 cup sour cream, for the dressing
  • 1/2 cups mayonnaise, for the dressing
  • 1 jalapeno, without veins or seeds, finely chopped, for dressing
  • 1/4 cups celery, finely chopped, for the dressing
  • 1/4 cups pickle, finely chopped, for the dressing
  • 1 teaspoon garlic powder, for the dressing
  • 3 tablespoons coriander, finely chopped, for the dressing
  • 4 cups cream cheese, cubed, for topping
  • 1/2 tablespoons onion powder, for coverage
  • 1/4 cups pineapple in syrup, for coverage
  • 20 white breads
  • 16 american cheeses, in slices
  • 16 slices leg ham, in slices
  • 8 slices Pineapple in syrup, cut into quarters
  • salt
  • pepper
  • Pineapple in syrup, in thirds, to decorate
  • 1/4 cups chives, finely chopped, to decorate

Preparation

For the dressing, in a bowl mix the sour cream with the mayonnaise, the jalapeño, the celery, the pickles, the garlic powder and the coriander. Season with salt and pepper and integrate evenly. Reserve in refrigeration until use.
For the coverage, add the cream cheese with a silicone spatula and mix with the onion powder and the pineapple syrup; you should get a spreadable mixture. Reserve in refrigeration until use.
Cut the edges of the white bread and make sure that the squares are the same size. On a plate place 4 slices of white bread, spread with the jalapeño dressing, add the yellow cheese, the slices of leg ham, the pineapple in syrup and repeat until you have 4 layers. Top with slices of white bread.
Cover the sandwich with the cream cheese mixture. Garnish with pineapple in syrup and chopped chives. Refrigerate until serving.

PRESENTATION

Garnish with pineapple in syrup and chopped chives.

TIPS

Refrigerate before serving so the consistency is firm.
