Boil enough water in a pot over medium heat, add the chicken pieces and cook for 30 minutes or until the chicken is tender. Remove the chicken pieces and reserve the broth. Then, cut the chicken into medium pieces. On the other hand, the scraps will only provide flavor and nutrients to the preparation, so it is not necessary to keep them. Cook the rice with 3 cups of water for at least 18 minutes over medium-low heat. Remember to cover the pot and use a non-stick saucepan to avoid using oil. Once the rice is cooked, set aside.
