Nothing richer and juicier than a good cut of meat! We tell you how to prepare a Pork Chop Cowboy al Pastor on the grill. To cook this recipe for Pork Chop Cowboy al Pastor it is important to seal in reverse, so as not to burn the condiments of the al pastor's marinade and preserve the flavors.

Ingredients

3 servings
  • 50 grams of achiote for the marinade
  • 5 pieces of guajillo chili pepper clean and soaked, along with its soaking water, for the marinade
  • 1/4 of Cup of pineapple juice for the marinade
  • 3 pieces of garlic for the marinade
  • 1/2 tablespoon of allspices for the marinade
  • 1/2 teaspoonful of oregano for the marinade
  • 2 pieces of Amara® pork cow cutlet 300g each
  • 3 slices of pineapple for the sauce
  • 1/2 piece of onion for the sauce
  • 3 pieces of habanero pepper for the sauce
  • 1/4 of Cup of lemon juice for the sauce
  • 1 tablespoon of coriander finely chopped, for the sauce
  • 1/2 piece of avocado cut into cubes, for sauce
  • enough of salt and pepper

    Preparation

    For the marinade, blend achiote with guajillo chili, vinegar, pineapple juice, garlic, pepper and oregano.
    Place the Amara® pork cowboy chops in a resealable bag, pour ¾ of the marinade and close the bag trying to eliminate all the air. Marina in refrigeration around 1 to 3 hours.
    Prepare the steak at 230 ° C, cook the pieces of meat with indirect fire without the marinade for 30 minutes, varnishing with the marinade you reserved halfway through cooking.
    Finish the cooking with direct heat for 4 minutes, turning half way through cooking, aiming to get an internal temperature of 63-64°C. If necessary, varnish with a little more marinade. Remove and let stand 2 minutes.
    For the sauce, grill the pineapple and onion over a low heat for 5 minutes, turning halfway through cooking. Cook the chiles for 2 minutes on direct heat. Remove and cool slightly.
    On a board cut pineapple, habanero pepper, onion and mix in a bowl with lime juice, cilantro and avocado. Season with salt and pepper.
    Serve the pork chop cowboy with the pineapple sauce and accompany it with tortillas.
