Preparation
Cup the panela cheese with a spoon, reserve what you removed from the center for the filling and cut it into squares.
Heat a pan over low heat, add the olive oil, garlic, guajillo chile and mushrooms until they release the juice. Add the epazote, the LALA® Panela Cheese that you reserved for filling and season with salt and pepper to your liking. Cook for 10 minutes and reserve.
Place the LALA® Panela Cheese in an extended dish and fill it with the preparation. Add some croutons and enjoy.
