These casseroles are ideal as canapé in meetings or parties, and their recipe is very easy to follow. They have a sweet and fresh taste, which will amaze those who try them, and they are accompanied by a delicious grapefruit salad with ostion dressing, which you will learn to make from scratch. Ingredients

4 portions
  • 1 1/2 cups sushi rice, clean and soaked in cold water, for the casseroles
  • 2 cups Water, for the casseroles
  • 3 tablespoons rice vinegar, for the casseroles
  • 1 package Vita + ® Grapefruit Cups , 170 gc / u (juice)
  • 1 tablespoon sugar, for the casseroles
  • 1 teaspoon salt, for the casseroles
  • enough Sesame oil, to grease
  • 3 tablespoons oyster sauce, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette
  • 3 tablespoons rice vinegar, for the vinaigrette
  • 3 tablespoons Vita + ® Grapefruit Cups , (juice)
  • 1 teaspoon honey, for the vinaigrette
  • 1 teaspoon lemon zest, for the vinaigrette
  • 2 cups baby arugula, for the salad
  • 1 cup cucumber, Persian fillet, for salad
  • 1/2 cups red onion, in strips for salad
  • 1 package Vita + ® Grapefruit Cups , (segments)
  • 1/2 avocados, in medium salad cubes
  • nori seaweed, in strips to decorate

Preparation

In a small saucepan, place the previously drained rice, add the water and cook over medium heat until it boils. Lower the flame, cover and cook for 20 more minutes. Remove from heat and let stand for 10 minutes. Reservation.
In a bowl, separate the segments of Vita + ® grapefruit cups from the juice. Reservation.
In a bowl mix the vinegar, grapefruit cups juice Vita + ®, sugar and salt until fully incorporated. Place the rice in a large bowl and pour the vinegar mixture, move with the help of a stick to incorporate. Reservation.
Grease the muffin tray with the help of sesame oil, place a tablespoon of rice on one of the pancake spaces and with the help of your hands, press to shape a basket. Repeat the process until you finish with the spaces in the tray. Cool until the baskets are firm. Reservation.
For the vinaigrette, mix the scallop sauce with olive oil, rice vinegar, grapefruit cups Vita + ® juice, honey and lemon zest until fully incorporated. Reservation.
In a bowl, mix the arugula, add the cucumber, the purple onion, the Vita + ® grapefruit cups and the avocado. Reservation.
Place the salad on the rice basket and pour the scallop and grapefruit dressing. Enjoy!

PRESENTATION

Decorate with strips of Nori seaweed, accompany with vinaigrette to taste.

TIPS

When making the casseroles, be sure to press the rice well so that it does not lose its shape.
