Ingredients

8 portions
  • 3 tablespoons olive oil
  • 5 tablespoons garlic
  • 1/4 cups onion, finely chopped
  • 3/4 cups dried tomato
  • 1 1/2 cups potato, diced
  • 1 cup tomato sauce
  • 2 cups cod, desalted
  • 1/2 cups green olive, sliced
  • 3/4 cups capers
  • 3/4 cups almond, filleted
  • 1/4 cups güero chili, finely chopped
  • 1/4 cups parsley, finely chopped
  • to taste salt
  • to taste black pepper
  • 1 package Saladitas® cracker
  • enough olive, to decorate
  • enough parsley, to decorate

Preparation

In a frying pan over medium heat under the olive oil, add the garlic and sauté for 3 minutes, add the onion, dehydrated tomato, potatoes, cook for 5 minutes or until the potatoes are soft.
Add the tomato sauce, the cod, the olives, the capers, the sliced almonds, the güero pepper and cook for 20 minutes over low heat. Add the parsley, remove from heat and reserve
Serve the cod on the Saladitas® Cookies, decorate with olives, parsley and serve in an extended plate, accompanied by white wine.

PRESENTATION

On an extended plate, decorated with olives and accompanied by a glass of white wine.

TIPS

The dehydrated tomatoes add a sweet and subtle flavor to the cod.
