Cut the spinach into strips. Heat a pot or pan with the butter and add the finely chopped garlic. Sauté for a few seconds and add the spinach to the pan until it turns a brighter green. In the blender, place the cream cheese and half of the sour cream and blend. Place this mixture in the pot where the spinach, butter, and garlic were sautéed. Cook over medium heat while incorporating 1/2 cup of Parmesan cheese, the other half of the sour cream, salt, and pepper. Once the dip takes longer to come together when stirred with a spoon, turn off the heat and it's ready!.
