For a delicious and easy dinner, but which is sure to be the favorite of children and adults at home, prepare this recipe for Easy Baked Mexican Molletes. These molletes are prepared with refried beans, turkey breast and Manchego cheese. You can serve them with pico de gallo and even with a touch of habanero. This easy recipe for molletess can also be prepared in an electric oven.

Ingredients

6 portions
  • 1/4 cups bacon
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 1 cup refried beans
  • 1/2 tablespoons oregano, ground
  • 1/2 tablespoons oregano, ground
  • 2 leaves epazote
  • enough salt
  • 6 box breads
  • 12 slices FUD® Turkey Ham Care-t +
  • 12 slices Manchego sliced cheese FUD® Care-t +
  • 2 tomatoes, finely chopped, for the pico de gallo
  • 1/4 red onions, finely chopped, for the pico de gallo
  • 1 tablespoon fresh coriander, finely chopped, for the pico de gallo
  • 1/4 cups lemon juice, for the pico de gallo
  • 1 tablespoon olive oil, for the pico de gallo
  • enough avocado, in slices, to serve

Preparation

Preheat the oven to 180C (or 356F)
In a pan over medium heat, cook the bacon until golden brown. Add the onion and garlic, cook a few minutes and add the beans, oregano, cumin, epazote, salt and cook a few minutes.
Spread the beans on each piece of bread and place them in an oven-safe dish.
Arrange sliced turkey ham and sliced manchego cheese FUD® Care-t + on top of each bread. Gratin in the oven for about 5 minutes or until the cheese melts.
For the pico de gallo, mix in a bowl the tomato, with the purple onion, the cilantro, the lemon juice, the olive oil and season with salt and pepper. Serve the with the pico de gallo and avocado.

PRESENTATION

Serve with pico de gallo sauce and slices of avocado.

TIPS

You can also make them in an electric oven.
