A delicious Mediterranean snack made of a dough called Phyllo which is very light and crispy. This dough can be found in Mediterranean or import shops, usually frozen.

Ingredients

8 portions
  • 300 grams phyllo dough
  • 90 grams butter, melted
  • 120 grams feta cheese
  • 1/4 cups parsley, chopped
  • 6 tablespoons zataar spice blend

Preparation

Remove the Phyllo dough from the box (if purchased frozen defrost according to package instructions) and cover with a damp cloth so it does not dry.
In a deep bowl, mix feta cheese, chopped parsley and Zatar.
Take a leaf (they are very thin) and put on it a light layer of butter.
Fold the dough sheet in half and place a spoonful of cheese filling in the middle.
Roll the dough to cover the filling and make rolls. Cover the rolls with a little more butter.
Put the rolls in a baking dish and bake at 180 degrees centigrade for 20 minutes.

PRESENTATION

Serve the rolls accompanied by a yogurt or chickpea sauce.

TIPS

These rolls can be made with many fillings: brie cheese, fresh cheese, dehydrated tomato, pesto, and jam with cheese.
