This guacamole with elotitos and queso fresco is very delicious and original, because it fuses the delicious preparation of guacamole and esquites, besides being easy to prepare it has a touch of cilantro and chili flakes, it is totally delicious.

Ingredients

6 servings
  • 1 Cup of whole kernel corn for the esquites
  • 1 tablespoon of oil for the esquites
  • 1/4 of piece of onion finely chopped, for the esquites
  • 2 spoonfuls of epazote finely chopped, for the esquites
  • 2 pieces of Chile de árbol pepper for the esquites
  • 1 pinch of Salt for the esquites
  • 1 tablespoon of flakes of chili
  • 3 pieces of avocado in cubes
  • 1/4 of Cup of onion finely chopped
  • 1 Cup of fresh cheese
  • 3 spoonfuls of coriander finely chopped
  • 1 pinch of Salt
  • 1 piece of Chile de árbol pepper
  • 2 pieces of green lemon
  • enough of tortilla chips To accompany

    Preparation

    In a comal roast the ears of corn until they get a golden brown color, shelling the corn, reserve.
    In a hot pan, add the oil and fry the onion with the corn, the epazote and the chile de árbol, season to your liking. Reservation.
    In a mixed bowl, the esquites, with the chili flakes, the avocado, the onion, the fresh cheese, the cilantro, season to your liking and add a few drops of lemon, decorate with more cheese, chile de árbol.

    PRESENTATION

    Serve the guacamole with the esquites, abundant cheese, cilantro and chile de árbol.

    TIPS

    You can also roast the corn and add only the roasted grains.
