Add the potatoes to a bowl and mash with a masher until you have a puree, add the flour, cornstarch, breadcrumbs, and egg and mix until you have a homogeneous mixture. Place the dough on a board and wax paper and flatten it with a rolling pin. Sprinkle with a little flour and cut out circles with a cutter. Refrigerate.
