Preparation
If you are using fresh artichokes, remove the 4-5 first layers of artichoke leaves until they have a tender color.
In a steamer cook the artichokes for 30 minutes or until they are well cooked.
Bake the garlic for 30 minutes at 180 degrees centigrade. Remove from the oven, peel and chop.
Prepare a glass container and mix olive oil, lemon juice, white vinegar, salt, pepper, thyme and parsley. Mix well and add the chopped garlic .
Add the artichokes and mix well. Cover the container and allow it to marinate for at least 2 hours before serving.
