This recipe came out one day that was already late fortnight and had few things in the pantry, so these ingredients had them at home, we prepared these delicious quequitas and now are the favorites of my family and friends, every time I see family and friends ask me to prepare them.

Ingredients

4 portions
  • 1/2 kilos Maseca flour mix
  • 1 cup wheat flour
  • 1 teaspoon pending
  • 1 pinch ground black pepper
  • 1 liter Water
  • Oil Oleic®
  • 1/2 kilos Ranchero cheese, grated
  • 1 cabbage, washed, disinfected and finely chopped
  • 1/2 kilos canned refried beans
  • 12 green tomatoes, cooked
  • 3 serrano peppers, cooked
  • 1 white onion
  • 1 clove garlic
  • 1/2 cups fresh coriander, washed, disinfected and chopped
  • 1/2 kilos cream
  • salt, to taste
  • 1 teaspoon ground garlic

Preparation

In a bowl, combine the maseca, wheat flour, salt, ground garlic and pepper.
Add water until we have a dough for tortillas.
Make balls the size of a meatball, and flatten in a homemade tortilla maker.
Fill with grated cheese, fold and let stand 20 minutes.
In a frying pan with Oil Oléico® hot over high heat fry the quequitas, remove them from the fire and place them on absorbent paper to remove excess oil.
For the sauce, grind the green tomatoes, serrano peppers, onion, cilantro garlic and salt to taste. You can cook chilies and tomatoes in the comal or in water.
Spread the fried fried quequitas, add cabbage, salsa, cream and serve.

PRESENTATION

Your dish would be better presented if you add some avocado moons with a few leaves of cilantro.

TIPS

You can also add red sauce, pico gayo sauce and substitute cabbage for lettuce.
