Ingredients: 1 kilo pork shoulder steak; 3 ancho chiles; 4 guajillo chiles; 1 onion; 1 clove garlic; 2 cloves; 1 pinch ground cumin; 2 allspice berries; 1 teaspoon oregano; 1 tablespoon salt; 5 tablespoons vinegar; 1/4 cups water; 1 bunch fresh cilantro, chopped; 1/2 pineapples, chopped; Oléico® safflower oil, as needed

Clean the chiles and soak them in warm water for 20 minutes. Blend the chiles with 1/2 onion, garlic, cloves, cumin, pepper, oregano, 1/2 teaspoon of salt, vinegar, and water until it becomes a paste.
