This delicious recipe of donuts with muffins and chilaquiles combines in a perfect way the sweet with the salty, dare to experiment a different recipe.

  • 10 green tomatoes
  • 4 serrano peppers
  • 1 clove garlic
  • 8 tortillas, in pictures
  • 1/2 cups onion, chopped
  • 3/4 cups fresh cheese
  • cream, to taste
  • 1 can black bean, or refried bays
  • 1 clove garlic
  • olive oils
  • 8 donuts, glazed
  • 1/4 kilos Oaxaca cheese
  • 1 cup pico de gallo sauce


To prepare the chilaquiles: Boil the previously washed and unshelled green tomatoes together with the serrano peppers, use slow heat.
Blend the chilies and tomatoes with a 1/3 cup of the water where they boiled.
Pour the sauce in a pan, season with salt and cook over medium heat until the flavors are concentrated and the level is reduced a little, from 4 to 5 minutes. Keeping warm.
In another pan, fry half of the tortillas in 1cm of oil, until golden brown. Around 3 minutes. Drain and place in a kitchen towel that will absorb the fat. Repeat the process with the other half of tortillas.
Return all the tortillas to the pan with 1/4 cup of the oil used and add the onion, cover and let cook until translucent, about 4 minutes, remove if necessary so that it does not stick or burn.
Add the sauce and cook moving for 3 minutes.
To prepare the beans: Finely chop the onion and garlic clove. Brown in a pan with oil and pour the beans from the can, mix and cook while stirring for a few minutes.
For donut bases we have two options, split them in half or if you want to use a complete one for each base then you will have to toast them a bit, over low heat and a short time so that they do not melt.
Once we have our bases we anoint the beans, we add the previously melted Oaxaca cheese to spread easily and we add a portion of chilaquiles.
Add the cream, fresh cheese and pico de gallo to taste.


Garnish with cream, cilantro or pico de gallo.


The pico de gallo sauce is a Mexican sauce that is prepared simply with onion, tomato, cilantro and chopped green chile.
