You do not need to know how to prepare dough for empanadas with this recipe, because in this version the empanadas are made with puff pastry. As stuffing they have delicious spinach, with onions and mushrooms, in addition to Manchego cheese, and are ideal for loading and carrying easily anywhere. Ingredients

4 portions
  • 3 tablespoons butter
  • 1 cup onion
  • 1 tablespoon garlic
  • 2 1/2 cups mushroom
  • 1 teaspoon oregano
  • to taste salt
  • to taste black pepper
  • 4 cups spinach
  • enough puff pastry
  • whole kernel corn
  • enough manchego cheese
  • enough egg, to varnish
  • enough sesame seed

Preparation

Heat a skillet over medium heat and add the butter, onion, garlic, mushrooms, oregano and season with salt and pepper. Add spinach and cook for 7 minutes. Cool
Stretch the puff pastry and cut circles to form the empanadas. Stuffed with spinach, corn kernels and cheese, close and form the pie. Varnish with egg, add sesame seeds and bake at 180 ° C for 20 minutes.
