Preparation
Chili, garlic and spices are ground and fried in the butter, adding vinegar to form a very light sauce.
Let it boil, add the vegetables and turn off immediately.
Season with salt and let it rest, preferably from one day to the next.
The tortillas are fried until they brown.
They are rubbed with the ground beans, the chileajo and the grated Manchego Lyncott ® cheese are put to them.
