Ingredients

12 servings
  • 12 tortillas medium
  • oils to fry
  • 1/4 of kilo of Manchego cheese Lyncott ®
  • 200 grams of guajillo chili pepper soaked raw
  • 3 heads of garlic
  • 2 whole black peppers
  • 1 clove
  • 1 tablespoon of oregano
  • 3 spoonfuls of lard
  • vinegars to taste
  • 100 grams of carrot
  • Salt to taste
  • 1 Cup of refried black beans milled with thick consistency
  • 200 grams of potato Cooked and chopped
  • 200 grams of green bean cooked and chopped
  • 200 grams of pea cooked

    Preparation

    Chili, garlic and spices are ground and fried in the butter, adding vinegar to form a very light sauce.
    Let it boil, add the vegetables and turn off immediately.
    Season with salt and let it rest, preferably from one day to the next.
    The tortillas are fried until they brown.
    They are rubbed with the ground beans, the chileajo and the grated Manchego Lyncott ® cheese are put to them.
