Ingredients

6 servings
  • 3 liters of Water
  • 1 kilo of Langa® skinless cod loins
  • 1 Cup of orange juice for the marinade
  • 1/4 of Cup of vinegar for the marinade
  • 1/2 tablespoon of cumin for the marinade
  • 1 tablespoon of Dried oregano for the marinade
  • 50 grams of achiote for the marinade
  • enough of banana leaf grilled
  • 1 Cup of red onion for the sauce
  • 2 pieces of habanero pepper for the sauce (roasted and finely chopped)
  • 1/4 of Cup of orange juice for the sauce
  • 4 spoonfuls of lemon juice for the sauce
  • enough of salt and pepper
  • enough of orange sliced, to serve

    Preparation

    Soak Langa® skinless cod loin in a pot with cold water, let it sit for 2 to 3 days until it desalts. Changing the water every 12 hours. Rinse and drain.
    Preheat the oven to 180 ° C.
    For the marinade, liquefy the orange juice with the vinegar, the cumin, the oregano, the achiote.
    Pour over the cod and marina for 30 minutes.
    On a refractory place the banana leaf, the cod and cover with the rest of the leaf, bake for 40 minutes or until cooked.
    For the sauce, in a bowl mix the onion with the habanero pepper, the orange juice, the lemon juice season with salt and pepper.
    Serve the cod with the onions and a slice of orange.

    PRESENTATION

    On a plate accompanied with pickled onions.

    TIPS

    You can marinate the cod one night before so that it absorbs the seasonings better.
