Ingredients

  • 1/2 cups olive oil, for the mint and lemon dressing
  • 1/4 cups lemon juice, for the mint and lemon dressing
  • 1 cup peppermint, disinfected, for the mint and lemon dressing
  • 1 teaspoon salt, for the mint and lemon dressing
  • 1/2 teaspoons ground black pepper, for the mint and lemon dressing
  • 1/2 cups Splenda, No Calorie Sweetener, granulated. For the mint and lemon dressing
  • 750 grams White fish, season, for ceviche
  • 2 cups lemon juice, for ceviche
  • 1 teaspoon salt, for ceviche
  • 2 tablespoons onion, chopped, for ceviche
  • 2 tablespoons green chile, chopped, for ceviche
  • 250 grams pineapple, diced, for ceviche

Preparation

For the mint and lemon dressing: mix all the ingredients well in a blender.
For the ceviche: Cut the fish into medium cubes.
Marinate the fish in the lemon juice and salt for about 1 hour until cooked.
Drain and mix with the green mint and lemon dressing.
Add the chopped onion, the chopped green chile and the diced pineapple.
