Preparation
Cut the fish into small pieces (cubes 1.5 cm) and mix with the onion in a large bowl.
Wash and drain onion and fish well. Season with salt and hot pepper. Quickly stir the mixture with the lemon juice. Wait 5 minutes and refresh by adding a couple of ice cubes. Mix well and remove them immediately, before they melt.
Serve the ceviche immediately in a bowl, accompanied by sweet potato, purple onion and corn.
