Ingredients: 4 cups rice, (for sushi); 6 tablespoons rice vinegar; 8 tablespoons sugar; 2 tablespoons salt; 10 strips surimi, (imitation crab); 4 tablespoons green onion, slice; 2 avocados; 2 cucumbers; 1/4 cups mayonnaise; 1 lime; 1/4 cups vegetable oil, in spray or sesame oil; 6 tablespoons black sesame seeds, for decoration; 5 cups water, to cook the rice; 1 tablespoon Sriracha sauce, optional

Put the rice in a deep container with cold water and watch as the water takes on a slight white color. Drain the rice and repeat until the water remains clear. In a pot over medium heat, combine the rice with 5 cups of water. Cover and let the water come to a boil, then lower to a simmer and cook for 10 minutes or until all the water has been absorbed.
