In a bowl, place the potatoes and, using a masher, mash until you have a puree, add the egg, cornstarch, fresh cheese, parsley; season with salt and pepper, add the cod and mix until you have a homogeneous consistency. Set aside. Using your hands, form the croquettes, coat them in flour, egg, and then bread them with breadcrumbs, pressing well to compact.
