Preparation
In a bowl, mix the orange juice, lemon juice, olive oil and orange and lemon zest. Add the grated ginger and the cayenne pepper.
Put the fish fillets in a pyrex and season with salt and pepper.
Put half the juice mixture on the fish and make sure they cover well. Let marinate in the refrigerator for 30 minutes.
Preheat the oven to 400º F.
Remove the pyrex with the fish from the refrigerator and add 2 tablespoons of water.
Bake until the steaks are tender and cooked, between 10-15 minutes depending on the thickness of the fish.
Meanwhile, put the rest of the juices mixture in a pot over high heat and reduce by half.
